This is the final product made from cocoa cake. The cake is ground into a very fine powder and at this stage; the cake often undergoes further processing including further sterilization as well as alkalization. The degree of alkalization will affect both the final color and taste of the cocoa powder; the greater the level of alkalization, the darker and more intense the color. The most well known use for cocoa powder is of course cocoa drinks, after sugar and milk powder have been added, although liquid chocolate milk drinks are also very popular. Cocoa powder is also used in biscuits, and other products within the food industry.
